Roasted Zucchini

Zucchini gets a Mediterranean spin with the addition of a salmoriglio sauce, a southern Italian-style blend of olive oil, garlic, oregano, and lemon. We roast slices of the green squash until they're perfectly tender, then add on the dressing for tangy, herbaceous flair.
