Almond-Date Bars

These no-bake snack bars are packed with nuts, dried fruit and rice cereal. For the best texture, use naturally sticky whole pitted dates. Make these bars ahead of time and pack them in a lunchbox for work or school.

Ingredients

  • 1 cup Marcona almonds
  • 1 1/4 cups whole pitted dates (about 15)
  • 3/4 cup dried apples (about 2 oz.)
  • 1/4 cup sweetened coconut flakes
  • 1 tablespoon honey
  • 1/8 teaspoon kosher salt
  • 3/4 cup crispy rice cereal
  • Cooking spray

Directions

Place almonds, dates, apples, coconut flakes, honey and salt in the bowl of a food processor; process until finely chopped. Add cereal; pulse to combine. Press date mixture into bottom of an 8-inch square glass or ceramic baking dish coated with cooking spray. Cut into 12 bars.
