Caramelized Onion & Goat Cheese Toast

Sweet caramelized onions and creamy goat cheese team up in this easy yet elegant dish that makes a great appetizer or side with soup or salad.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon unsalted butter
  • 2 large white, yellow or red onions, halved and sliced (6 cups)
  • ¼ teaspoon salt
  • 1 teaspoon chopped fresh thyme, plus more for garnish
  • 4 slices whole-grain country bread (about 2 ounces each), toasted
  • 4 tablespoons softened goat cheese
  • Freshly ground pepper

Directions

  1. Heat oil and butter in a large skillet over medium heat. Add onions and salt; cook, stirring occasionally, for 5 minutes. Add thyme; reduce heat to medium-low and continue cooking, stirring occasionally, until golden brown, 20 to 30 minutes more. (Add a tablespoon or two of water during cooking if the pan seems dry.)

  2. Spread each piece of toast with 1 tablespoon goat cheese. Top with 1/4 cup onions and sprinkle with pepper and more thyme, if desired.
