Italian Pasta Salad

Save yourself some time and make this simple Italian dressing ahead of time! Mix it together and store it in the fridge until you are ready to serve your pasta—the flavors will meld and taste better that way too.

Ingredients

1 lb. cooked fusilli pasta
8 oz. mozzarella balls, halved
4 oz. salami, quartered
1 c. artichoke hearts, chopped
1 c. cherry tomatoes, halved
1/2 c. pitted black olives, sliced
1/3 c. extra-virgin oliive oil
1 clove garlic, finely chopped
2 tbsp. red wine vinegar
1 tbsp. chopped fresh parsley
2 tsp. Italian seasoning
Pinch of crushed red pepper flakes
Kosher salt
Freshly ground black pepper

Directions

  1. Step 1In a large bowl, toss pasta, mozzarella, salami, artichokes, tomatoes, and olives. 
  2. Step 2In a jar, combine oil, garlic, vinegar, parsley, Italian seasoning, and red pepper. Secure with a lid, then shake to combine; season with salt and black pepper.
  3. Step 3Pour dressing over pasta salad and toss to combine.
